On the Coffs Coast...

    The Brands, Eden, Jolly and Terrasanna sauerkrauts, sold at most health food shops contain organic vegetables, and are fermented with salt, however the salt is generally refined and the final products are heated (pasteurised), which technically means they should not be on this “Good” list. The pasteurisation process kills the beneficial bacteria, and may also destroy many of the enzymes and nutrients.

    Unheated, organic lacto-fermented vegetables made with unrefined salt and/or a culture, not vinegar.

On the Coffs Coast...

    Unless you make it yourself, the only unheated,(unpasteurised) organic lacto – fermented vegetables, not made with vinegar, and sourced on the Coffs Coast to date is Rosa Mauvra’s Sauerkraut. So far, it is only available from the Bellingen Growers Market. Rosa, conducts occasional Food Medicine workshops teaching you how to make lacto fermented foods.
